Following our study of Bordeaux’s finest vineyards and an extensive search of Southern Oregon, we found the singular combination of climate, soils, and slopes that would allow us to grow “Right Bank” Bordeaux grapes of classic quality and character. To this small hillside we brought vine cuttings from Grand Cru estates of the Pomerol & St. Emillion appellations in France.  Specially selected clones chosen through years of taste trials for their unequalled ability to produce wines of exceptional flavors and aromas.

To fully exploit their unique heritage, these estate only grapes are gently tended through small batch “open” fermentation, a labor-intensive process that large wineries cannot afford, but one recognized for extracting the very best each grape has to offer.  The resultant wine is aged 3 years using a combination of French Oak and American Oak barrels, and finally blended into a singular expression of the winemaker’s art.

The resulting wine’s unique flavors, aroma, and complexity profile is especially appealing to the sophisticated wine drinker and will disclose a new level of appreciation to the average wine drinker.

Daedalus Cellars is a small, family owned winery, started in 2000 with just four barrels of Pinot Noir from Phelps Creek Vineyard. In nine years, the winery has grown to an annual production of roughly 3500 cases.

Sourcing from some of the best vineyards in the state of Oregon, we work closely with the vineyard managers,diligently monitoring the vineyards throughout the growing season and bringing the fruit in at the last moment when it has reached its fullest flavor potential. In the winery, we monitor the fermentations and, trusting the natural elements to do what they do best, we do as little as possible.
We choose vineyard sites that ensure the natural acidity that wines require for balance, to accompany food properly and to age gracefully. We employ long cold soaks to build structure from the finest-grained tannins. Spontaneous fermentations and exclusively gravity-fed handling help to build and preserve silky, supple mouthfeel and complex flavor profile.

Our obsession is Pinot Noir, though we also produce small amounts of Pinot Gris, Syrah, Riesling, Chardonnay and Grüner Veltliner.
